We smoke our salt over a fire until the fragrance and smoke of the wood has permeated each crystal. Distinctive smoked salt flavors are created by using natural Apple and Alder woods, without artificial color or flavors added to salt from the Atlantic Ocean. We believe that the cool, mineral-rich saline waters of the Gulf of Maine provide our natural sea salts with a unique flavor. As the first salt works in Maine in over 200 years, our company brings forward the tradition of harvesting pure and natural sea salt, directly from the source...the ocean! We make our sea salt naturally, through the evaporation and reduction of sea water in solar green houses and shallow pools. Our solar greenhouses, known as "salt houses" are filled with fresh sea water from the Gulf of Maine. Sea salt crystals are formed over time from the effects of natural solar evaporation and wind. We do not wash or bleach our natural salt at any time during the solar production process. Therefore, the nutritious trace minerals naturally occurring in sea water are retained in our products. We also do not use chemicals or drying agents.
